To me, the machine is a shaper. The demountable piece with profiled blades on it is a shaper cutter. We can't suggest a project until you tell us what shape your new cutter cuts.

I am going to assume that you mean a shaper, as in the machine. The "cutters" are the sharp parts that bolt on. I suspect that you already know that and bungled the words in your excitement over scoring an awsome new tool! This seems like an odd question to me because usually a shaper is a tool that a relatively expieranced woodworker buys, and would already know what to use it for.
Shapers are typically used to create profiles that require removing a lot of material such as raised panels, drawer lock miters, cope and stick door construction, mouldings. If the unit is smaller (1.5 HP or less) there are limited cutters that will work effectively on it. You will be using it a lot like a big router. If it is a 3 horse you can use any of the profiles common to wood working. These machines are as dangerous as any other machine in the shop, so use all the safety precautions aplicable.
What to build? Well something with a LOT of doors makes sense. How about kitchen cabinets, or a large entertainment center. A shaper is an a incredible tool.
