I’m planning to do some exterior remodling on my home and will be using PVC boards to replace rotted trim on a 1842 home. I will need to route a 1/2″ cove on one edge. Will I ruin a carbide tipped bit? Can I nail this material?

If your talking about the TREX type material. Yes it's absolutely routable with no Ill effects to carbide. Treat it just as you would wood, nails included. You may want to consider finish head stainless steel screws, They will virtually disappear into the "lumber".
