Formica is a brand of laminate, there are other makers but they are all similar. Any lumber yard should be able to order it for you, some home centers may also stock it. If there is a business in you area that makes counter tops they may have some left overs at a good price.
You will want the heavier version made for countertops, not the thinner stuff meant for cabinet sides (vertical grade) or the underside of the counter. If you cover the top with laminate you should also cover the bottom with it. If you don't, you will have warpage problems.
There is no need to use laminate, I've built several tables with MDF tops finished with a couple of coats of shellac followed by some furniture wax and these tops lasted for years with no visible wear.
However you build the top, be sure to run a couple of cross braces under it as close as possible to the plate opening to keep the top flat over time.
