I’ve made a couple of live edge white pine table tops and finished them by spraying on 2 or 3 coats of garnet shellac for color and top coated with 4 coats of AquaZar gloss poly. They look great and seem fairly durable but because it’s pine I’m looking for something a little harder as the tops do dent if you are not careful. Any ideas of a harder finish. A sprayable product would be good. Thanks for any help.

Stainless steel. Pine will dent. No finish you put over it will stop that from happening.
You may try the poured-on epoxy type bar finish. It's sets up pretty hard.
What Steve said. And the epoxy will make it look like a bar, in my opinion. I have MANY pine topped "things" including tables. The few dents (a hammer makes a pretty indelible one--ask me how I know) just add to the character of hand made piece of furniture.
In addition to the info already provided, let me ask if the shellac you used was dewaxed? Waterborne acrylic finishes should not be applied over a shellac that contains its natural wax. Dewaxed shellac should be used or you can run into adhesion problems. This is particularly true it the tabletop will get some abuse.
