I’m making a couple of small cabinets for the bathroom that measure about 14dx21wx25h. They are poplar and I’ve been planning to paint white. However, they are looking quite good as is, and I’m wondering what would happen if I just put on some water based satin poly and declare it done. I’d be trying to seal in the beige/gray pickelled(sp?) look. No sealer, no stain just the water based poly? any thoughts?

Waterborne acyrlic finishes, with or without polyurethane, are marginally OK for bathrooms. If the cabinets are likely to see strong cleaners or perfumes etc, then it might not hold up very well. But if they are out of the main sink/vanity action--say to hold towels or the like, then it would probably work OK.
Check out the look on scrap, of course.
One more thing, the poplar is likely to get more brown over time--most people would say "looking better", but it would in a year or so be not quite so beige and "pickled" looking.

Thanks, you've given me something to think about (not unusual), and thanks for the clarification on 'Pickled'.
This wood has been sitting in the rack for about 3 years, I'm hoping change would be minimal. I guess I could always paint afterwards if the color went south on me?.
