I can't answer your question with a simple answer. Red oak, white oak, quarter or flat sawn? Is it furniture or flooring, toys or paneling made out of oak? What kind of color are you after? Dark oak, reddish colored, pickled white, bleached blond, or jet black? Do you want a shiny finish or a matte finish? Do you want a perfectly level surface or do you want to feel the pores in the wood? How much work do you want to put into finishing? A little bit of rubbing or a lot? Are you brushing, spraying, padding on ####finish? Too many questions.
I will just say that when building my stool project in white oak, I like to fume the stool to darken it and then use a simple oil finish. A coat of wax goes over the top of everything next.
