I’m making a set of cutting boards…maple with cherry dowels holding the handles in place. My problem is that the dowels are irregular shapes & don’t fill the holes perfectly. I plan to just use walnut oil as a finish on the boards, but I would like to fill the gaps left by the dowels. Can you suggest a way to fill the gaps using cherry sawdust that will stay intact after use? Thanks.

I would suggest some type of epoxy or one of the clear "super "glues.
You may be able to mix a little sawdust with an epoxy although a dry pigment of the right shade would serve you better.
The instant glues tend to flash off too quickly to be able to color them in that manner.
Fill the gap a little proud. Once it sets up, use a sharp chisel to carefully pare away the excess.
