My granddaughter Natalia Rose was born May 3rd at 12:45pm. 7 lbs. 9 oz.

Soon enough for the baby, but we've been eating a bunch of it. My wife especially. We always get it from Tops. I don't like the touristy BBQ like Corky's.
I can sum up Corky's with two words.. It Sucks! ..and I obviously don't have to tell you that. The Corky's about 8 mile from me here in Atlanat closed down and there is definitely a reason for that. You can fool some of the people for only so long before you can't fool anybody and the Corky's here did just that.. :>)

Real Memphis BBQ is smoked meat with the sauce on the side, if you even want sauce. You can go to Tops and order a sandwich and they'll blend the lighter pork with the darker, fattier pork (where the flavor is) in whatever proportions you want. I get a sandwich with just the pork and one spoonful of slaw on the sandwich and no sauce. It's unbeatable.
Agree that sauce should be on the side as the smoked meat is the real deal. Some places have terrible sauce. I am not a tart sauce person and like it just right. I do usually have sauce on the side to dip bread in. And since a taste for sauce is personal as I like it kinda sweet.... I just take my own bottle of Sweet Baby Rays as I love that stuff. ha.. ha...
I will have to try Tops which I believe you recommended a while back.
