I’m going to build my first molding plane here shortly. I have a book on order called “Making Traditional Wooden Planes” but I have a question before it gets here.
Given that I am right handed, what side of the plane should the chips eject from?

On most molding planes the chips eject from the right side (assuming you are holding the plane in the working position). But if the plane is cutting a tongue then you get two shavings, one from each side. I don't think it makes a difference.
