When planing using this jig, you're planing down at an angle. If you view the picture just underneath it, you'll notice the angle the fine fella has the plane at. The blade on a miter plane (and most others) is not full width. So, it will ride on the 45° jacks, and if you keep the mouth and iron of your plane cutting just the stock in the miter jack/vise, you won't trim away the jig, just the piece of stock you're trueing.
Generally speaking, you will remove a little of wood on the jack, but not enought to effect it's performance, as the plane will ride in the "groove", so to speak.
Shooting boards/miter jacks are very effective at trimming corners to perfection.

I came across the miter jack about 18 months ago and decided to build one. It works prety well but it got me thinking, why not just use the front vise and place the stock on an 45 degree angle flush with the top? Makes it easier to plane too...
Many ways to skin that cat.
