I took a quick look at the brand I use (whiteside) and only saw a 2" max on cutter lenght, but there may be some out there. If not in a router table, it would be risky, be carefull and good luck on the hunt.
3"?? That's scary, IMHO. The longest I've seen, say at MLCS or Eagle America, is 2"

2.5" is known; a very spooky cutter, (I have one).
Unless well experienced in bunji and sky diving, I would not recommend this cutter.
Routers
We have some 2-1/2" pattern bits but prefer insert type bits and add the bearing to the top. Initially more expensive but it maintains the cutting diameter and knives are pretty cheap after that plus you can rotate the knives when dull. These are used in a commercial timber shop and are 50 mm cutting depth. We get them from http://www.ridgecarbidetool.com They don't show them in their online catalog.
