One more point about the cabinets. How do you know these are finished with "poly", by which I assume you mean an oil based polyurethane varnish? That sort of finish is virtually NEVER used by commercial operations. A lot depends on how old the cabinets are: older cabinets would likely have nitrocellulose lacquer, but newer cabinets might well have conversion varnish. CV does present some refinishing problems.
