Does anyone have suggestions on how to get up to speed on using knock down hardware and building knock down furniture. I am planning to build a large desk and think that knock down construction would be useful.

Buy some fasteners of various kinds and experiment? Most of the ones I remember seeing in catalogs didn't seem terribly expensive.
Think about how you're loading the joint, shear, tension, bending, etc. Think about the failure mode of diffenent kinds of fasteners. That's where the experimenting comes in.

Check out Lee Valley Tools (not a commercial) they have excellent hardware for knock down assembly.
