I’m building a king size bed and know the mattress dimensions are 76″x80″, but how much gap should I leave between the mattress and the side rails and head/foot board? Is 1/4″ gap all around too much, not enough? The bed plans I’ve looked at focus on the mattress size and height and say build to fit your mattress but don’t mention a gap, if any. Thanks!

It depends how much you will want to hurt your knuckles when you make your bed, my last build had no box, just a flat surface and it’s easy to make and the mattress stays in place. If I was to have a box , I would have the inside walls of the box tapering outwards and about one inch larger than the mattress.
I made mine with 1/2" all the way 'round and I'm happy with it.

That depends on the amount/type bedding you are using. Two sets sheets, mattress protector, blanket, duvet? An inch would be most comfortable. Maybe post image of the actual frame? Also, there are considerations if you are using a bedskirt as well.

Helpful to have the actual mattress. I built my bed to 80" length for queen, the stated "official" size of the mattress. My actual mattress is a little shy of that, and my bed is too big--I have had to fill the gap with a towel to keep the mattress from sliding around. My net overage is about 2" total, and it's way too big.
Seconded - If you don't have the actual mattress, it is a good idea to measure one in the store to ensure the dimensions are within lick.
I'm surprised that someone has purchased a mattress that is not the actual standard size or the size is not the same as the stated size. If that is possible then measuring a mattress in a store will not be the mattress that you get. I've found mattresses to be pretty spot on as far a dimensions go. If the mattress is the wrong size then the fitted sheets don't fit ,it won't fit properly in the bedframe that you purchase. It's a whole standardized industry. Could it be that the mattress was manufactured for a metric market and then labeled here as a standard queen?
It seems that they do that with some things....dowels -says 3/4 " but rattles in the hole!
Recently built a king sized bed using the standard dimensions and accounted for a 1" gap all the way around. However, after purchasing the mattress it definitely fit much shorter than the advertised 80" length, width was spot on.
