What is the best finish to use to keep the true color of Maple? Other than a water based product. I do use shellac but I have not used blond. Would blond be a good choice?

Regardless of what you do, there will be some yellowing of maple over time.
Super Blonde shellac keeps it relatively light, but you can achieve a lighter look with a waterborne acyrlic. (Be sure that you don't get one of the acyrlics that add amber color to achieve the warmer look of oil based finishes.) With suitable spray facilities CAB lacquer also imparts very little color.
