I own the book:
Carving & Whittling: The Swedish Style
by Gert Ljungberg & Inger Anson-Ljungberg.
This book covers a bunch of different scandinavian carving, like (really great) bowls, mugs, figures, etc., as well as some terrific spoons. The section on spoons is pretty good and has a lot of sketches to help you design your own. It's not a book of projects with patterns to follow and such but a book of techniques and ideas.
I recommend it.

You got two good suggestion on books.
You can also go to the Internet, go to Google and type in something like "How to carve wood spoons", and you will find a lot of information on it. There are a lot of spoon carvers out there.
Spoon carving isn't hard at all. Best thing to do is to get a knife and a piece of firewood and start carving. You can start by copying a wooden spoon in the kitchen. Then you can start making them fancy. You can make them curved and put decorations on them.
To hollow out the spoon, you need a gouge or a hook knife.
Go to the library, and you'll find someting on spoon carving. You can find it under "treenware" or "treen ware" or carving spoons.

It is a magazine for woodcarvers produced by Fox Chapel publications. They have a bookstore that you can browse through. I've seen books that will instruct you on making spoons in the store.
