I have an upcoming wine cellar project to do and I’ve never done one before. I’m hoping you or someone else at finewoodworking.com can help answer a question or two.
1. Is it ok to use Danish Oil as a finish for wood in a wine cellar or is it possible that the vapors will taint the wine?
2. Are walnut, mahogany or redwood appropriate woods for a wine cellar?

Hi there,
I can't imagine oil vapors tainting corked bottles of wine. Presumably the finish will be dry before you load the cellar with bottles of wine. If you're concerned about smell then perhaps a water based lacquer might be better.
As for wood choices, it's up to you, your sense of taste, and your pocketbook. The woods don't come into contact with the wine so don't worry about that. As for looks, all the woods you mention would look great holding up fine wine. So would cherry or ash. Good luck. Gary
