Ok, now that I’ve figured out how to sharpen planes and scrapers – what do I do with these two new spokeshaves? One convex and one concave. Do I need different stones? (using Norton waterstones for the planes). Thanks!

Conical shaped waterstones are available so they can do both concave and convex blades. You can also get or make a dowel of appropriate diameter and wrap sandpaper around it. That works for a concave blade. A convex blade can be free-handed (I don't have too good results with that) or dish out a piece of wood with a carving chisel and glue sandpaper to that.
A drum sander will work on the concave one.
