What is the easiest way to do mitered plywood edging? I read an article here, but doesn’t seem that easy to cut the miter after it is glued on to the plywood. How do you all do it?

Are you talking about putting edge tape on the top of a drawer that has already be assembled, but mitering it in the corner?
If your intention is to add solid wood strips; the "short point to short point" measurement of the applied strip is the same as the length of the edge to be covered.
Practice...'till you can do it right the first time.
I do a lot of slab ply doors, and never use miters. I just set up the doors so the butt joint is hiden by the long (stile) of the edging. With 1/4" edging rounded off with a 3/16" bit, looks great and cuts down on a lot of fitting when you have many doors to do.
