I hammer veneered crotch mahogany to a small desk drawer front. After it was dry, I noticed that there were several small chips in the surface of the veneer. I am afraid I will sand through the veneer if I try to sand them out. Since hide glue is transparent to finishes, could I apply additional hide glue to the surface of the veneer to act as a filler, and then sand it level?

Hide glue might work, but wouldn't be nearly the best option--it will shrink as it dries, and if thick could be brittle. The better solution is to get your basic finishing accomplished--ie. any dye or stain and the first of the finish top coats applied. Then you know exactly what color you need and can use shellac burn in sticks to fill such chips. They are available in a great many colors, including translucent material.

Chips
If they are small chips - you can get some saw dust from the actual veneer with light sanding - add the saw dust to some shellac and overfill the chips - when dry sand level -
