I recently used some for interior trim. Kentucky Coffee Tree is inexpensive here (Southern Minnesota) and seemed to machine and finish well. I would say from the pieces I got that it looks somewhat like a cross between ash and oak. The grain can be quite interesting. If I recall it was a little splintery. I'm sure Jon will provide more detailed insight, but I'd say go for it!
Sphere, Kentucky coffeetree is an excellent cabinetwood. It's similar to honeylocust in that it is pinkish tan in color and has a ring-porous figure. I wrote an article on this species for The International Wood Collectors Society's monthly bulletin; World Of Wood, back 5 or 6 years ago. If you'd like a copy, e-mail me.
