I am in the aerospace business, where we apply hardwood veneer to furniture and require a high gloss finish on our end product. We first apply a fire retardant, a sealer, prior to applying three coats of polyester topcoat. Each coat is cured in a warm room at 120 F for 2 hours, followed by a sanding operation starting with 400 and finishing with 1200 grit. The final coat is polished using a compound and a buffing wheel. After approx 1 month we have seen orange peel or shrinkage on some of our panels. What so you recommend. The poly is a Duro – Lak Top coat

Although I have not used polyester topcoat, orange peel I've seen is often indicative of too much product buildup, so I would thin it accordingly and be sure the preceding coat is dry before applying the second coat.
Contact your coatings manufacturer. If they are any good, they should have a technical department just to deal with issues like this.
Polyester finishes are probably not used by most of the folks who frequent this forum.
You also may want to go to the WoodWeb site (http://www.woodweb.com/). They have a "Professional Finishing" forum and well respond to anyone in the business. They are knowledgable about a professional finish like polyester.
