I wish to fill the grain as Oak has an open grain but do I do this before or after fuming with amonnia
The oak finish is fairly smooth but is it worth wetting to raise the grain and then sanding
Finaly can any one recommend an easy to put on hard wearing finish

If you are going to fume, do it before you fill. But before you do, a little cautionary note. Fuming is very hazardous and a high quality respirator and heavy gloves need to be used. This is not your household ammonia, actually you use ammonia hydroxide. Click on this http://www.jtbaker.com/msds/a5472.htm) and then decide if you really want to fume. To get the desired effect you need to use White Oak, all from the same tree for consistent tone (color).
Personally, I do a lot of Mission Style pieces and I use stain, it's much safer.
As to your question about finish, Minwax makes a wipe on polyurethane that is available in satin and semi-gloss, I highly recommend it.
