I am building a jewelry box and I want to finish it with Danish Oil. Should I finish the inside of the box with the same thing or leave it unfinished? Should I finish the inside with something else? I don’t want the inside to smell like oil forever.

Don't ever put an oil on the inside of a box, you'll regret it for a very long time.
The interior can be left unfinished without problem. One school of thought is any thing on the inside will smell.
I have finished interiors with a thin coat or two of shellac. Leave the box open for a week or so after you finish it to let it cure.
Another trick the old Europeans used for the draw interiors was to mix a little gum benzoin into their shellac. You see benzoin has a faint vanilla aroma scent.
You can do the same thing by adding a drop of vanilla extract to shellac prior to using it. If you do this add the vanilla to a little denatured alcohol and then mix it into the shellac.
Is it necessary? No. Can it be interesting...?
