I’m wondering about how long cherry needs to oxidize before putting on an oil finish. I remember years ago in FW an article that said you should sand it, then let it sit for a number of days before applying Watco or any oil finish, to avoid getting an unpleasant orange cast to the wood. I did that and was much happier with the finished project. How long is that time, or is there a way to speed up the process? I want something done for Christmas!

Conventional wisdom states that leaving it in a sunny location for a week or so will help you get that deepening.
You could try putting some oil on an inconspicuous area or scrap piece and see if you like the way it looks.
With Christmas right around the corner that may be what you need to do.
