My son is building a home and has purchased a slab of black cherry for the counter top in his new bathroom. Any suggestions or references for finishing? Hand planing? Sanding? Spar varnish?

Hand planing or hand sanding? It's a matter of opinion and personal preference. Ask ten people that question and you'll see what I mean.
I would suggest sanding it to 180 grit. Clean the surface well prior to finish coats.
A better choice than spar varnish would be a good phenolic resin varnish. The spar varnish is better suited for exterior surfaces due to it's inherent flexibility.
For a varnish you might consider Behlens Rock Hard, McCloskeys Gym Seal, and Waterlox. The gym seal has a yellowish cast to it so this must be taken into account
Be sure and seal the underside of the top also. It doesn't need to be finished the same as the top. You could use shellac for this as it is fast drying and will seal the wood very well.
For the top, I would also seal it with shellac prior to varnishing. Zinseer Seal Coat will do the trick. It is de-waxed shellac and is fully compatible with the varnish. Thin it out a little with denatured alcohol and apply a coat. Scuff sand it with 220 or 320, clean all the dust and you are ready to varnish.
Take some time for sample finish boards. You'll be glad you did.
