I am making a bar top of oak for a friend’s club and they will give this top alot of use and abuse. What would be the most durable finish to use? Is there an epoxy type product that is easy to use?

I don't do epoxy finishes but I know more than a few people use West System epoxy when they do.
Check them out as they have a variety of types and fillers for different uses.
You may also consider going to a marine supplier if you have any in your area and check out some of the two part urethane's available.
You can also check out suppliers of floor finishes.
Just remember, for everything you get you give up something;
if an epoxy or two part system fail there is only one way to repair it and that is removal. That requires mechanical removal.
It's unfortunate that a product called Gym Seal (McCloskey which was bought by Cabot) is no longer being made. It is an oil varnish that is a one part system that you could beat the living hell out of and just sand it a little when needed and re-coat it.
