I need to fasten a 30″ x 50″ x 3/4″ mahogany table top and am thinking about using S clips on the long apron sides to allow for movement, while using two center screws in the front and end aprons.
I have 2 questions:
1. Does this make sense so far or is there a better or more preferred method?
2. Can glue be used as well (esp at the short front and end aprons to complement the center screws)? — Or will that defeat the goal of allowing for mobility?

For that large of a top I would use wood clips, they won't bend the way the metal clips will if the top tries to cup. Be sure to calculate the amount of movement in the top, it could easily be 1/2 inch or more, so the clips will need to have 3/8 inch of range on each side so they won't pull out of the slot when the top narrows during dry weather.
You can use two screws an inch or two apart for more security, to attach the center of each end to the short apron to keep the top centered on the base. Do not use glue to attach the top, it isn't needed for strength and will only cause problems.
