Does anyone know where I can find good information on building (not just installing) wooden doors and windows?
The Robert Lang Shop Drawings for Craftsman Interiors: Cabinets, Moldings & Built-Ins for Every Room in the Home is a good start for doors, but it only has a few choices.
I suspect I’ll end up in used book stores to find much in the way of these plans, but if anyone has suggestions, I’d be delighted to hear them.

Search Amazon for author John Birchard or subject "making doors and windows."
"Making doors and windows" brought up the usual installation guides, but John Birchard's name did the trick!Thank you very much.
