I am making a set of doors for a wall mounted tool chest. Since i am going to be hanging tools from the inside, the doors will be 1×5’s on edge with a plywood panel. (Think a very large drawer sitting on its back) I also will be using a piano hinge.
I was thinking about using through dovetails but I’m wondering if these will resist racking sufficiently?

I wouldn't worry about the dovetails. Glue in the plywood panel and you'll be just fine. The piano hinge will also be important in resisting movement. Make sure it's applied well and your cabinet will do just fine.
