I am in mid-construction of a cherry dining room table. I am seeking advice on a good, durable finish for it. I don’t want a plastic feeling finish but I want/need more protection than Danish oil/wax that I often use on less “demanding” pieces.

I think you'd be happy with 3-4 coats of Minwax wipe on poly. I did my cherry dining table and end tables with it years ago and it has held up extremely well. Also doesn't have the plastic look of brush on poly.
Wipe on some non-poly varnish--50/50. Eight to 10 coats for the top, maybe 6 for the sides.

Why am I tired?
Because you forgot the meanest stripper's name and because you can put those coats on in 3 days tops (practically no time for each coat)--with no drips, runs, or errors. What makes you tired about that? Try it, you'll like it.
