Hi,
I want to put a clear finish on the sashes, jambs and casings of some new anderson windows. The interiors are unfinished pine. I want a very flat finish and don’t want to use polyurethane. I was wondering how an oil would work, such as boiled linseed or tung oil.

I thought you might be able to offer some general advice on this. In know your standard answer, and one that I second, is to test a few finishes on some scraps and see what you like best. But maybe you have a better recommendation?

You could use an oil if you'd like. Be sure and sand the wood first. Clean the surface well and you can proceed.
You'll need to do a few coats at the least. After the first coat you can apply the oil with a very fine wetdry paper in a high grit (800 for example). Be sure and wipe it very dry upon completion and be VERY careful with oily rags. Be aware though, this finish does not give you any surface build.
There are dead flat varnishes out there. I know McCloskey makes one. You could also use Waterlox Sealer. After drying, a light rubbing with a maroon scotch pad will reduce reflectivity to almost nothing.
