Has anyone ever glued two 8/8 lumber together in order to creat cabriole legs rather than buying 12/12 stock? I was told I could by cutting @ 45 degrees and gluing then using the joint as the knee area. Any input?

Do you mean: gluing 8/4 rather than buying 12/4?
I usually cut 8/4 into 2" x 2-1/2", cut the scrap piece off the top and glue it onto the top to make the blank fit my legs.
Yes, that's exactly what I meant. Thanks. Probably going to use mahogany and am carving ball and claw feet for the first time.

Mahogany is readily available in 12/4 and the labor required to make ball and claw feet is so involved, that it would be better just to go ahead and make them from solid stock, from an appearance standpoint. When selecting your stock, be sure to have the growth rings go as close to diagonal as possible, with the lines pointing towards the front corner, as this will give a consistent grain pattern on each face.
