I would like to know if there is any cabinet software that will give you the ability to assemble and disassemble cabinets as well as a cutting list.
I saw a Youtube Video for a cabinet software that does that and more but I forgot the name of the software and the location. I think that the software was free as well.

SketchUp can do that and it is free. You can draw your cabinets in 3D and even place them in context with walls and appliances (I am assuming you are referring to kitchen cabinets.) and so on.
As of yesterday there's a new version of the CutList plugin for SketchUp. It'll not only give you a list, it'll give you layouts. I haven't had time to give it a thorough test drive but it looks good.
I have a complete cabinet shop in my garage, but I spend 80% of my time doing other handyman jobs, plumbing, electrical, hanging doors, etc. As a result, I never take the time to learn any of the many programs I have. I have Adobe Illustrator, SketchUp, Design Intuition, TurboCAD, Woodshop Calculator, and eCabinet Systems.
I have found Woodshop Calculator to be very helpful. It was quick to learn and very helpful at at making frame and panel doors.
Have you looked at eCabinet Systems? I have run some of the video tutorials, and it looks like it is easy enough to learn for basic designs. It does draw cabinets, create cut lists and place the cabinets in 3D settings. It is free. It liks to Thermwood CNC products, but you don't have to do that. I am not sure how long it takes to set up the shop parameters and become somewhat proficient.
I really could use something that is intuitive and quck to learn. Right now, I always seem to go back to the drafting board, paper and pencil.

I send it over to a shop w/ a CNC Router "Thermwood"
and they cut my parts,, Then I can pick up my parts in lest than 5 days.
We use Alibre Design Parametric 3D Solid Modeling software to model our custom cabinetry and woodworking projects. They have the free Xpress version, and many other affordable versions that provide a step up in capabilities.

eCabinets software is a free download from Thermwood, and while it integrates to their CNC routers for parts cutting, it is also used by many people in what I call "saw shops" to make cabinets, built-ins, and furniture.
You "build" items using the software, which displays your creation in scale 3D, and the software can then be used to produce cutting lists, parts labels, and more.
