I’ve made a couple face frame cabinets for my shop. The opening is 20″ high x 21-1/2″ wide.
My question is: Can I make just one door 21″ high x 22-1/2 wide or should I go with 2 doors 11-1/4″ wide?
The doors will have a 1/2″ overlay.

21 " X 22 1/2" for a door is not beyond the limits but right there .
Typically 22 1/2" is as wide a door we make usually , if it looks better we make a pair so you just need to decide which will either work better or look better .
Will you make a Frame & Panel door or slab door ?

If I go with 2 doors, will I need a center stile or can the doors meet in the center?

No stile needed, just let the bottom shelf be the stop.

I think that two doors would look better, but it really depends on what you're planning to store in the cabinet and how much space you want to give up so the door(s) can swing.
