Best finish method for kitchen table?

I just built a kitchen table top out of maple and am wondering what is the best finish to use for dining tables? thanks in advance

Best? No such thing. Subjective term. But CAB lacquers are pretty common, not too hard to apply, look good, and durable. Conversion Varnish is a second that has gained popularity for all its fair qualities. Still a lot going for it, a little harder to work with, and clean the guns good or you'll hate yourself when its all over.
