I am wondering if any one can help me out. I recently made a potting cart for my wife from reclaimed mahogany pallets. This potting cart is to be used for repotting her plants and will live outside. I would like to stain or dye it some what to even out some of the color, and put a finish on it that will be protected from the weather and UV rays. The simpler the process the better, as I am somewhat of a novice on finishing.

Mahogany, generally speaking takes dyes and stains very well, so any color change that you want to create can easily be done with any basic stain or dye. As far as a top coat is concerned for something that is going to live outside; IMHO, I would recommend spar varnish.

Mahogany will, in my experience, even out in color while darkening a few shades with time. Having said that, I still prefer to dye it the color I want... and it does take color nicely, I love working with mahogany.
For your application, a marine spar varnish would be the only topcoat I would use. For a warmer feel, you can thin the spar varnish with some turpetine and wet sand it into the wood with some 220g. Just work it in and lightly wipe off any excess. You can't do much with it once it dries, spar varnish is engineered to stay a little soft.
