While I don’t profess to be an expert I would have to say that is not normal. Mine are dead flat and always have been. I can’t imagine that is a result of abuse of the blades.
Are they bent such that the bevel side is concave or convex?

They're made that way to aid bedding of the iron.
Now that's weird. Mine were/are all flat. lwilliams said they are bent too.
Might I have a mongrel or perhaps homemade blades? This is puzzling me.

going to have a learning curve
It's really not all that bad, at least as to the cutting experience. Just take light cuts and the one thing that is conducive to success is choosing the right stock. Straight grained stock is the order of the day.
Now about setting everything up to make the cut ..........................
