Anyone have a source for 8″X1″X5/8″ grinding wheels? All I can find are those with a set of plastic reducer bushings to adapt the 1″ hole in the wheel to various other arbor diameters. I just don’t like those things. The bushings always seems sloppy and the wheel never really mounts on center. Or even a good solid metal bushing would be nice.

Grinding wheels should be dressed and trued each time they're mounted. You could have anyone with a metal lathe turn a bushing for you or you could probably turn one from brass on a wood lathe with a chuck. Even with such a bushing, you'll still need to dress the grinding wheel each mounting. Grinding wheels just aren't manufactured to the tolerances of things like saw blades because proper use requires dressing to keep fresh sharp abrasive exposed. Proper technique will eliminate the problems you seem to be having.
Thanks for the info and the link. I guess dressing the wheel is where I fall short. Any recommendations on wheel dressers? Diamond? And one more question... can I add a variable speed control to my Delta 8" grinder?

I just read the article a few days ago, wanted to post the link, but couldn't remember where I'd read it. Good reading, especially since the cheap-skate in me has never been willing to pay what they want for those colored wheels.
The cheap-skate in me also has a question. What would you think of trading a half set of hollows and rounds for a 1995 Pontiac Grand Am with only 165,000 miles on it??? (Someday.........)

So after a frustrating attempt at truing and dressing my ACE Hardware wheel I headed for a welding supply shop. Got a nice Sait wheel. The plastic bushings in this wheel are nice and snug... none of the slop like the ACE wheel. The Sait wheel dressed easily and runs very vibration free.

You cannot vary the speed of your grinder. Only brush type motors will work with those rheostat gizmos. For $100 you can pick up two speed grinders at Woodcraft and Delta. Another solution is to use a softer wheel which doesn't get as hot or add water to cool the tool.
