I’m building a sofa table that doesn’t have a skirt. What’s the best way to attach the tabletop? I bought Taunton’s “Building Furniture” book, but all the table top attaching techniques rely on a skirt for support.

Well there's a reason folks use a skirt. It helps to prevent racking in the table and it gives you some way of attaching your table top and holding it flat. Lots of reasons for using one.
If you're not using one, then you'll be attaching your legs straight into the top. Presumably you'll do this with some kind of wedged mortise and tenon joint. No guarantees you'll keep the top flat unless you add some battens underneath it to help. Good luck. Gary
