I started using gel stain made by General Finishes and find that while applying it, using a piece of cotton wrapped in linen, it starts drying and cannot be evenly spread on large table tops. The problem is more apparent when I am in the second or third coat. Can I add a dab of say baby oil to make it spread evenly. Like I do when I apply shellac? Otherwise would you have any suggestions for me?

Gel stains can be somewhat difficult at times.
You can try cutting it with mineral spirits say 41 (stainthinner) and see if it gives you a decent wet edge.
Another thought;
Mix a little glaze base into it. Ben Morre has a product called Studio Glaze. It is essentially a neutral resin that acts as a vehicle for pigments. It is pretty thick and can be cut 11 with thinner for a watery consistency or 21 (glazethinner) for a little more body. If you get this product be sure and get the alkyd (oil) based one.
Mix this with your gel stain. The "how much " question takes a little experimenting. Try a 11 combo and test it out. Then adjust from there.
You'll find the stain will have a better wet edge time this way. You will also need a soft brush to help blend everything together as you go.
Don't use baby oil. It's just mineral oil that won't dry. You don't need that on the surface when you try to overcoat it with a finish.
