I picked up a maple tree from a friend and had it sawn into boards. The maple turned out to be Ambrosia or “ghost ” maple because of the beetle bore holes and dark streaks. I air dry my lumber and wonder if the beetles die when the log is dryed. Also, does kiln drying make a difference in the life or rather death of the beetle. I probably have around 200 bd ft of this wood flat sawn in 6/4 thickness.

The beetle will not be killed by air drying. You will need to have it kiln dried to do so. I don't remember the exact temperature that I've read in various sources but it is around 135 degrees for several hours. I think you can search here or one of the other woodworking forums such as Saw Mill Creek and get an expert answer.
