Im building a tri fold shoji and would like to use either wooden hinges or leather hinges. I ‘m looking for any ideas or suggestions for this. I saw a great example in Current work recently but cant seem to find any instructions. Thanks in advance.

Here's the link to the Incra wooden hinge plans. $12, but it includes the drill guide/jig. Thier design requires a specific router bit. Bought one for fun years ago, built one hinge, have not used them in a project. Might be a bit too small for your project, but the idea is there.

I too would be interested in finding out about leather hinges -- it seems that they were used extensively during the Middle Ages and I cannot fathom how they actually would work.
Attached is a diagram of one hinge I've seen on floor-standing screens and the like. It can be made from leather or fabric. It has the nice property that it allows the panels of the screen to fold flat with each other, and in either direction.
