I've seen them referred to as "recessed" door pulls or "flush" door pulls. They have some at http://www.antiquehardware.com , http://www.vandykes.com , http://www.myknobs.com ,
http://www.leevalley.com , and probably many other places that sell cabinet and door hardware.

Flush Cups Get the type that has undercut edges (the better to get a finger hold)
For sliding doors, no need for 'undercut'. Stein.
I've also seen them sold for use on Pocket Doors - Big Orange carries them.
1 - measure the board twice
2 - cut it once
3 - measure the space where it is supposed to go
4 - get a new board and go back to step 1
