Looking for some suggestions from the group. I have a piece of wood within two inches of the edge of our master bath Jacuzzi-style tub. It is oak, and the finish on it looks terrible, as it gets soaked about as often as I want to give my three-year-old twins a bath. Anyone have an idea for a durable finish. I primarily finish with oil, so I don’t have much finishing experience outside of that. I would like for it to end with a satin level of gloss. Thanks.

Use epoxy to water-proof the wood. Use varnish (not poly) over the epoxy if you need wear/scratch resistance.

Epoxy will provide the water-proofing. Use varnish over the epoxy if you need scratch/wear resistance also.

Use Varathane , this is a water resistant finish. I would cut the varathane with solvent to make it easier to brush. Apply four or five coats, this should last for many years before it needs recoating. Any good paint supply will carry Varathane. If I recall it is a plastic finish. I haven't used it for several years , but the times I used Varathane I was very satisfied. Epoxy is overkill, the oak is just getting wet, not floating in a pond.
