The Watco can says you can coat with poly after 72 hours. I waited the suggested time and applied one thin spray coat of poly. My poly finish first coat is still tacky after 40 hours of curing time. What do I do now?

Acetone wipe..~ I do the same all the time.. Maybe high humidity?
Had you completely wiped all the excess Watco after letting set for 15 minutes? It sounds like the Watco was not fully dry. Watco is linseed oil with only a little varnish in it. It takes quite a while to dry if it is not wiped dry.
What spray poly are you using? Are you sure it is fresh?
I wouldn't have done it that closely.
