I use the combination type that have both sensors to get the advantages of both. Any detector in a woodshop has to be vacuumed or blown out regularly.
Use both. Ionization is the first to detect fires that flare quickly, while photoelectric better detects fires that smoulder for a while before spreading.
In my state, photoelectric is now mandated in homes, but you'd be better served by dual sensors.
Just finished my new shop and had the same question. Code did not require one in the shop, but........ the basement also has a large bedroom, very large family room, 2 storage rooms and a bath. Code required ionization plus CO outside the BR and at stair, even though there is no gas heat on this level. For the cost (wired gthem myself) I put detectors in every room.
In the shop I used a combination and placed it above the electrical panel, which happens so to be located in there, on the thinking that news reports seem to indicate many fires start there. The inspector loved the entire setup, hardly looked at anything else.
