Just about anything..... a magic marker comes to mind.
But if you want to be really fancy, build up a lamination with layers of properly-colored material. Then route your lettering through the surface and into the colored laminations.
I used to make signs a long time ago with routers. I routed the sign, spray painted the routed letters black, and then sanded off the paint from the flat face, leaving a nice, clean, painted routed sign.

I use a similar technique. Instead of sanding I use the jointer set for an extremely light pass.<!----><!----><!---->
That works well. I prefer to fill the lettering with a colored epoxy, sanded level to the surface when dry.
How does this epoxy treatment weather? I imagine the epoxy would eventually pop out as the wood shrinks
I'm sure that is a possibility. I've never had it happen, though.
After routing, I just lightly burn the letters with my x-ray vision. The singed wood ages nicely. ;-)
Alternatively, I just paint or stain them carefully, using an artist's brush.
