I purchased a used 8″ Powermatic jointer at a auction and the manual says I can use a Arkansas sharping stone to sharpen the blades while the jointer is running . My question is which of the Arkansas stones do I use ? Any one have experience doing this on there Powermatic ?

The process is called jointing the knives, which makes the tops all the same height, but in my opinion, it also dulls them by grinding a flat, where it should be sharp.
Sharpening stones are all hard, which also makes them brittle. If the impact of the knives hitting the stone caused it to shatter, try to imagine the results, and I suspect you will have a little trouble actually putting your hands up close on both sides of the blade in anticipation of things going badly.
I have an old 12" Hall and Brown, that I regularly sharpen the knives on while they are still in the head. However, the outfeed bed will slide back out of the way, and I am not sure if you can do that on yours.
When I do this, I use 2 x 6" diamond hones, which I have glued to wooden handles, which allows me to use them more like a file, betting my fingers and knuckles back out of the way of the blade, and infeed table.
While I am sharpening, I have a little wishbone wedge that fits on the edge of the infeed, and against the knife, to hold it at the top of the arc of the cutting circle, while I dress the top bevel.
I can do about five touch-ups between taking the knives out to grind.
