I have recently decided to build a few “Arts and Crafts” pieces, specifically a box spindle chair, foot rest and end tables. The problem is I am not really sure how I should finish the pieces. I have read several articles about how to achieve a traditional look, ranging from ammonia fuming to dyes and shellacs to just plain old red oak minwax with a brown glaze. I can’t seem to decide which method is best.
Any suggestions?

I think the best way for you to decide is to make several test pcs. from your wood pile that the furniture will be comming from-
That will give you an idea and a choice for the finish you and yours will be happy with in the future.
